I see you're from Newport. We love it there! My mom and I raided your local quilt shop there last summer and spent too much money, but it was fun!
About the Southern Stars quilt. The FQ's in my kit were also 21-1/2" long, so I just cut them in half as best I could. Many quilt fabrics from a lot of manufacturers are the same way. You will still have PLENTY of fabric. I'm finding as I go a long that there is quite a bit left over from each block. We will be using some of those leftovers for the sashing when we are done with our blocks, so it's still a good idea to cut your fabric prudently, but I don't think you'll have any problems.
