This year we did a honey baked ham and we have so many leftovers, I put a call out to my facebook friends for ideas on what to do with the leftovers. A friend of mine from work sent this and it's presently in the oven smelling SO good I thought I would post it.
8 oz med egg noodles
2 T. butter
1/2 c. chopped onions
1/2 c. chopped green bell pepper (I used red because it's milder for the kids, but either would work)
1 can condensed cream of mushroom soup
1 c. sour cream (I used lite sour cream, for health reasons
2 c. shredded swiss cheese
2 c. diced ham
Cook noodles noodles. In the mean time, melt the butter in a skillet and add the onions and peppers. Saute until soft. Add sour cream and soup and stir to combine.
Spray the 2 qt casserole dish with cooking spray.
Layer 1: 1/3 noodles, 1/3 swiss cheese, 1/3 ham, and 1/2 sour cream mixture
Layer 2: same as layer 1
Layer 3: 1/3 noodles, 1/3 swiss cheese, and 1/3 ham
Bake at 350 for 30-45 minutes until heated through.
This smells so good, I can't tell you.
