My "I Spy" quilts are in the making year round.  I just pick a nuetral background fabric ( buy at least 4-5 yds when it is on sale) then as I'm sewing on projects all year I make two snowball blocks that match & put them in a box to save until I get enough to lay out a quilt.  It has been great having the blocks ready to put into a quilt at the last minute.  I usually use the same bk. grd. fabric for the back and pick a muilti-colored stripe cut on the bias for binding.  It is a neat way to use up your scraps as you work on other projects.
